The Bikini Cocktail
Yields 10 servings
For the Clementine Syrup (yields 750ml)
300ml newly squeezed clementine juice
200ml newly squeezed lemon juice
500g fine sugar
To make the Premix (yields 850ml, to serve 10)
400ml decent vodka
100ml classic gin
150ml peach-flavored liqueur
200ml clementine cordial (see above)
A few cranberries, for garnish
Mandarin essential oil, as a final touch
Directions
For the Citrus Syrup: Combine the listed ingredients inside a pot, heat until it reaches a gentle boil, mixing so the sugar melts. Next, turn off the heat allowing it to cool completely. Pour to a sealable bottle, close it and refrigerate it chilled, it can be stored for about one month.
For the Batch Mix: Mix every spirits and syrup into a sizeable container, allow it to infuse for an hour, then strain best through muslin, to ensure it's perfectly clear.
For serving: Measure 85ml of your batch mix into your stirring glass containing ice, and stir carefully for one minute to cool it down. Filter into a cold coupe glass or similar, garnish with a few cranberries and finish with a quick spritz of the essential oil over the top.
